Pickled fish in the microwave / Kerrievis in die mikrogolf

Pickled fish in the Microwave (Annette Human)

800g frozen hake fillets (or fresh fish from the sea if available)
Salt
2 Large onions
750 ml brown vinegar (3cups)
60 ml smooth apricot jam (1/4 cup)
50 ml mild curry powder (3 tablespoons)
30 ml sugar (2 tablespoons)
12.5 ml Worcester sauce (1 dessertspoon)
12.5 ml Chutney (1 dessertspoon)
5 ml mustard powder (1 teaspoon)
5 ml allspice berries (1 teaspoon)

Cut the fish fillets into fairly large portions.
Sprinkle with salt and set aside for about 2 hours.
Peel and slice the onions.  Separate into rings. 
Layer the fish portions and onion rings in a deep 3l (12 cups) microwave dish.
Mix the remaining ingredients and add to the fish and onion rings.  Cover the dish with clingwrap.
Microwave at 100% power for 20 min.
Turn the dish from time to time if your microwave oven doesn’t have a turntable.
Spoon the hot fish and onion rings into a clean jar and seal.  Leave for a day or two before serving.
