Cream Soda Cupcakes & Orange Cooldrink Cupcakes

Hier is 'n paar oulike cupcake resepte wat ek in die Kuier tydskrif raakgeloop het.
Cream Soda Cupcakes & Orange Cooldrink Cupcakes:

Frosty Cream Soda Cupcakes:

180 g Butter, softened
5 ml Vanilla Essence
2 ml Green food colouring
220 g Castor Sugar
4 Eggs
300 g Self raising flour
60 ml Jive Cream Soda Cooldrink

24 Paper cupcake cases

500 g Castor sugar
60 ml Cream Soda
50 ml water
4 egg whites

1)      Line 2 muffin pans with cupcakes.  Preheat oven to 180°C.
2)      In a large bowl, beat butter, vanilla essence and sugar with an electric mixer until creamy.
3)      Add eggs and beat till fluffy and pale.
4)      Sift in flour and Jive Cream Soda.
5)      Combine into a soft thick cake batter.
6)      Bake for 20 – 25 min. till skewer inserted comes out clean.

Combine sugar, cooldrink and water in a small pot.  Stir over heat, without boiling, until sugar has dissolved.
Boil, uncovered, without stirring for about 5 min. until sugar is thick.  Take care not to scorch sugar syrup which will change its colour.  Remove from heat.

In a large bowl, add egg whites and beat with electric mixer until soft peaks form.  While beating egg whites, add hot syrup in a thin stream and continue to beat at high speed until mixture is thick and frost-like.

Orange Delight Cupcakes:
125 g Butter
220 g Castor Sugar
4 Eggs separated
190 g Cake Flour
65 ml Corn Flour
10 ml Baking Powder
125 ml Jive Orange Krush Cooldrink

24 paper cupcake cases

125 g Butter
260 g Icing Sugar
30 ml Orange zest
2 ml Orange food colouring

1)      Line 2 muffin pans with paper cupcake cases.
2)      In a large mixing bowl cream butter and sugar until light and fluffy. 
3)      Add egg yolks and beat well.
4)      In a separate bowl, sift dry ingredients together.
5)      Fold dry inredients into butter mixture.
6)      Add Jive orange krush cooldrink and blend well.
7)      In a glass bowl beat egg whites until stiff and fold in gradually.

Divide cake batter between cupcakes.  Bake for 15 min. @ 180°C till skewer inserted comes out clean.

Frosting:  Beat butter until smooth and add sugar gradually.  Add orange food colouring and zest.  Pipe onto cupcakes and decorate with orange triangles.
